Brazilian Black Bean Soup, Mollie Katzen’s Recipes
Yields 6-8 Serving, 1 1/4 hours to prepare. (Get everything else done while beans cook.)
Preliminary: Soak 2 cups dry black beans in plenty of water for at least 4 hours or overnight. (Note: Depending on availability and time have substituted rinsed canned black beans.)
Place the soaked beans in a kettle or Dutch oven with 4 c water. Bring to a boil, cover, and simmer until tender about 1 1/4 hours.
- 2 c dry black beans, soaked
- 4 c water
- 1 T olive oil
- 3 c chopped onion
- 10 medium garlic cloves crushed and minced
- 2 t cumin
- 2 – 2 1/2 t salt
- 1 medium carrot, diced
- 1 medium bell pepper, diced
- 1 1/2 c orange juice
- black pepper, to taste
- cayenne, to taste
- 2 medium tomatoes, diced (optional)
- Optional toppings: cilantro, salsa, and/or sour cream
Heat olive oil in medium sized skillet. Add onion, half garlic, cumin, salt, and carrot. Sauté over medium heat until the carrot is just tender. Add remaining garlic and bell pepper. Sauté until everything is very tender (another 10 – 15 minutes). Add the sautéed mixture to the beans.
Stir in orange juice, black pepper, cayenne, and optional tomatoes. Can puree or just serve as is – like the picture above. Can top with cilantro, salsa, and/or sour cream. ENJOY!
