Lentil Patties

Recipe – Lentil Patties

Ingredients

  • 1C Lentils
  • 2C Water
  • 1 Medium zucchini
  • 1 Chopped onion
  • 1 Minced garlic cloves
  • 1C Almond flour (any type of flour can be used)
  • 6 Sundried tomatoes
  • 10 Green olives chopped
  • 1/2t Chilli flakes
  • Salt and black pepper for seasoning

Directions

  • Place Lentils in a pot add water. Simmer for 30 minutes.
  • Grate zucchini, drain, add pinch of salt then set aside.
  • Sauté onion about 3 minutes and add minced garlic cloves.
  • Add Lentils and onion mixture to large bowl then mash or mix with a hand Blender.
  • Add 1C of flour
  • Add zucchini, sundried tomatoes, and green olives.
  • Season with black pepper, salt, and 1/2t chilli flakes.

Cooking

Lightly oil pan. Shape Lentil mixture into balls then flatten into a disc. Cook over medium heat 5-7 minutes on each side until golden brown.

Serve with yogurt, salsa, or a favorite sauce. ENJOY!
