Recipe: Beet Hummus

Ingredients –

  • 2 small roasted beets (or sweet potato)
  • 1 15 oz can of chickpeas
  • 1 large lemon
  • 2 cloves garlic minced
  • 2 T tahini
  • 1/4 c olive oil
  • Any spices or herbs – suggested sumac and/or chives

Roast the beets, let them cool, peel, and blend. Then add remaining ingredients and blend until creamy. Adjust for spices, salt, and pepper.

NOTE: Roast beets – remove the green stems and save to add to salad, soup, or saute. Rinse the beets and add to a baking dish wiith about an inch or two of water. Cover with foil and bake at 375 F for30 minutes or until easily pierced with a fork. The time will be dependent on the size of the beets. Let the beets cool and skin should be easily removed.

HEALTH NOTE: Beets are loaded with vitamins and minerals, yet low in calories. Also contain a high concentration of nitrates to help lower blood pressure levels which may reduce risk of heart disease and stroke.
